Banana & Chocolate Cake



Oh! You know you want to!!



I baked a cake for a coffee morning last weekend – My good deed for the day.
It turns out not everyone was happy with this.
Oh no!  Apparently, I do too much baking for other people and not enough for my bois at home!
”I will bake you lovely lot a cake this week, I promise!” was my reply.
And bake a cake I did.  Banana and Chocolate cake.
It turns out not everyone likes Banana and Chocolate Cake!  You can’t bloody win, can you?!
”We have that in school and it’s disgusting!”
“Well, this is mine and not the school’s so it will be yummy!” was my reply.
And yummy it is!
Fancy making the men in your life drool?!
Here goes, you will need:
2 large ripe bananas
175g butter
275g self raising flour
3 eggs, beaten
1/2 teaspoon vanilla flavouring
225g granulated sugar
1/2 teaspoon bicarbonate of soda
100g chocolate chips
Enough Nutella to sandwich both cakes together and to decorate and also a few slices of banana for the top
Method:
I greased two 8 inch round silicone sandwich moulds with butter.  (I’m aware they say these are non-stick but old habits die hard!!).
Peel and mash the bananas until smooth in a bowl with the vanilla flavouring.
Gently heat the butter and sugar in a saucepan until dissolved.
Remove from the heat and stir in the flour and the bicarbonate of soda.
Beat in the eggs and the mashed banana.
Let it cool slightly – 5 minutes should do it.
Stir in the chocolate chips.
Then pour into the sandwich moulds – I say pour as it’s a bit like a batter mix.
Cook at 170 for around 30 minutes or until skewer inserted into center of cake comes out clean.
Once cooled, I sandwiched them both together with plenty of Nutella and also spread some on top of it.
I finished it off with some slices of banana.
Enjoy!
