There’s a long running joke at work {around 4 years long, to be honest!}, where I promised someone some Welsh Cakes if they would help me out with some work that I had to do. So, this is for him, if he’s reading. A little ‘how to’ with my Mam. He can have the recipe to make his own…but not my Mam. She’s all mine.
You will need : 8oz of self-raising flour, 1/2tsp of salt, 4oz margarine, 2oz currants, 1 egg and 2tbsp milk. Combine the flour, salt and margarine. Stir in the sugar and the currants. Mix to a fairly stiff dough with the egg and milk.
Roll out about 5mm in thickness and cut into rounds, don’t forget to use up all of those loose ends, too.
Bake on a moderately hot greased girdle for about 3 minutes on each side.
Place on a cooling rack and sprinkle with sugar.
Best served still warm with either some butter or jam of your choice. I had mine with lemon curd…BEST THING EVER.
