{they said it would be easy} cheese and leek muffins

Soup Season is upon us!  And with that comes everything Autumn…conker hunting, the big chunky knits are out, the slow cooker made it’s first appearance in a while yesterday, the fire may or may not have been on for a bit this morning {that depends on whether Paul reads this or not.. ;) , and salads are replaced with warm, comforting food.  Although I very nearly ordered a salad while out with the girls last night, but I was quickly given the disapproving look from a friend who shall remain nameless {she was 40 the other week, so I’m guessing she knows her stuff by now ;) } and quickly changed my mind.  Fishcakes it was.

Anyway, back to the Soup.  I fancied something a little different other than just toast to go with my soup at lunchtime.  A quick Google search and these popped up; cheese and leek muffins.  Ridiculously east to make too.

Broken in half, smothered in butter and then dunked in soup?!  So good.

What are you waiting for?!  Go forth and hunt for those conkers, wear all of your chunky knits, make some soup and smother these muffins in butter.

And while you’re at it, grab your girlfriends and go and watch Bridget Jones’ Baby!  Just don’t order the salad.
